What Is Milk Permeate Powder?

During the milk protein concentrate (MPC) and milk protein isolate (MPI) production process, fresh, fluid milk undergoes afiltration process to concentrate protein and extract fat and minerals. The co-product of the filtration process – primarily lactose and residual vitamins and minerals – then undergoes an advanced spray drying procedure to product milk permeate powder.

MPP is characterized by uniform particle size and a clean, milky flavor and aroma. MPP is valued for its slightly salty taste (attributable to the product’s mineral content), which lends a pleasant umami to any products in which it is incorporated. It may also be used as a substitute for maltodextrin fillers in nutritional products. Additionally, it  provides the same types of browning characteristics as whey powder, but with a better flavor profile.

The U.S. Food and Drug Administration does not consider the lactose in permeate or other dairy ingredients, other than straight lactose, as an added sugar. Therefore, milk permeate may be used in applications where some sweetness is desirable and added sugars are not.

Milk Permeate Powder Applications

One of the most common uses of MPP around the world is to standardize the fat and protein levels of skim milk and skim milk powder. Natural milk products often do not meet governmental standards for nutritional content, due to factors such as season and region. Dairy product producers add MPP in the necessary quantities to comply with the desired standards.

In the formulation of food products, MPP is an ideal ingredient for use in bakery products, confections, candy, frozen desserts and novelties. It is also ideal in ice cream, cultured dairy products and dairy blends. Other applications include sauces, soups, seasonings, meats, snacks and beverages, non-fat sour cream, cream cheese, dips and related products. This product provides a highly cost-effective fortification of non-fat solids. It can also be used in processed and recombined cheeses.

The nature of MPP makes it an exceptional emulsifier. It enhances oxidative stability over many alternatives, including soy lecithin. Milk permeate can even be used in a variety of fermentation applications.

As a dairy food product ingredient, MPP is an excellent bulking agent, potentially allowing producers to reduce production costs. It can improve product flow and reduce hygroscopicity. The pleasant flavor and aroma of MPP can reduce or eliminate the need for flavor additives, further reducing production costs and allowing for cleaner labeling. Producers may also be able to reduce the salt content of preparations and mixtures, due to the umami effect produced by MPP.

As a replacement for whey powder or non-fat dry milk powder, MPP is typically highly cost-effective – generally less than half the cost of non-fat dry milk powder and 20% of the cost of whey powder in many cases.
